This is such a naughty salad. It’s Frito Salad from Lisa Fain’s The Homesick Texan’s Family Table cookbook.
It’s just field greens with a simple homemade dressing, some extra veggies and two critica toppings — cotija cheese and Fritos.
I ate about half a brick of cotija while I was cooking — it’s salty and crumbly like feta but without the goat flavor. And of course a lot more Fritos were consumed than were called for as a garnish.
But hey, it’s salad for dinner. Really.
