This was a quick dinner that worked well on a day when we took the kids to the Lilac Festival after school.
I made the sweet potato filling in the afternoon, along with a batch of guacamole, so all that was left to do at dinner time was assemble the quesadillas in the skillet and cook.
This is a favorite recipe in our house. The sweet potatoes disappear into a delicous, sweet, Mexican-flavored filling. Yum!
