We made some extra snacks this week. These are Chocolate Coconut Date Balls.
I altered the recipe a bit. Instead of rolling the balls in coconut, I just added more coconut to the food processor with the rest of the ingredients. This batch was made with almonds and walnuts. I used prechopped dates, which tend to be a little sweeter and drier than whole dry dates. To make the mix stickier for rolling, I added some raisins until the crumbles pinched together easily.
These are also made with Valrhona cocoa powder, which gives them really good chocolate flavor. It’s amazing how they really do almost taste like brownies.
