This is Escarole soup with pasta and meatballs from bon appetit fast easy fresh cookbook.
We use half a pound ground beef instead of 3/4, so it’s a good match to beef taco night or other recipes where we use just a half pound of beef and freeze the other half.
I rolled the meatballs really tightly and small this time and the held together very well. I love the step where you simmer the meatballs in little broth, then scoop them out and reduce the broth to a glaze to saute the onions and celery in. It’s got really good flavor for such a simple soup.
