Beef and bean tacos


Assemble at the table with guacamole, beef/bean mixture, corn tortillas, a little pepper jack cheese, shredded iceberg lettuce and pico de gallo

Taco beef is adapted from a recipe in Joy of Cooking, using only a half pound of beef and adding most of a 15 oz can of black beans. Pico de Gallo was also from Joy of Cooking. Guacamole is based on Mark Bittmans’ How to Cook Everything, but without measuring anything.
